This flour is very special, it is used to make a stiff porridge that accompanies the most stunning African dishes. White corn flour is used to make the Tanzania staple, Ugali. South Africans use cornmeal for Pap. In Zaire "Bidia" is made using it, and in Malawi and Zambia "Nsima" can be made using white corn flour.
Organic White corn flour is produced by milling white maize grain (corn) into a flour through the Pin Milling system. The oily, protein-rich germ is removed for maximum nutrition. The flour should be refrigerated (all flour should be, we store it in the refridgerator untill it goes on the shelf).
We sell the flour in Commonsense Organics pre-packed bags (approx 400-600g) and it is $8.99 per kg .
In the western world it is used for gluten free baking and also as a binder or thickener.
